Back when I was studying my Masters my bank balance was at an all time low and figuring out Christmas presents seemed like an impossible task.
My cooking partner in crime E and I decided that we should make our gifts. This was one of those original recipes and has in fact remained a stalwart in our annual gift baskets.
Every year E and I take over one of our kitchens for the day and cook up a frenzy. Making cookies, biscuits, chocolates, jams and other food based goodies. These however are the best to make and we always have to double up the recipe to account for all the ones that accidentally fall into our mouths.
This recipe is completely dairy free and unlike most –
because we were on an budget – alcohol free.
I promise once you make these you’ll be craving them constantly. They are just the perfect sugary treat!
- 4 eggs, whites only
- 340g caster sugar
- 340g ground almonds
- 4tsp almond essence
- 2tsp vanilla essence
Preheat the oven to 170C.
Beat the egg whites until firm.
Mix the sugar and the almonds gently into it.
Add the almond and vanilla essence and fold in gently until you have a smooth paste.
Using a teaspoon place small heaps of the mixture on a tray lined with baking paper.
Bake for approximately 15 minutes until golden brown.
